BBQ Vegetable Mezzaluna
A wholesome and tasty treat
METHOD
- Take two large Portobello mushrooms, place on a baking tray with a little olive oil and a drizzle of balsamic vinegar.
- Season with salt and pepper and cook until just tender.
- Place a layer of soured cream on the base of a Bakehouse Mezzaluna, top with a handful of rocket, slices of avocado and some chargrilled courgettes and asparagus.
- Season between each layer.
- Put the mushrooms on the top of the vegetable stack and serve immediately
